I’m so sick of eating my kid’s leftover mushed bananas and soggy peanut butter sandwiches. I also have way to many packages of ramen.
My dreams more often than not consist of enjoying delectable feasts like back in the child-free days. Days where money was more prevalent, and time was free.
But I’ve tried to embrace the life of motherhood. For us having a little and being a SAHM means pinching pennies. Our little cherub gets the good food from the store. Mom and dad get ramen and frozen pizza.
Enter in my fancy ramen!
It’ll take you back to your single and poor days. After OD’ing on ramen in college, I bet you never thought you’d touch the stuff again?
Fancy ramen comes with the nostalgia of days passed mixed with a little fancy.
Here’s how I do it:
- package of your favorite ramen
- your kid’s leftover veggies (I use carrots, peas, and corn)
- leftover pot roast or other meat dish
- the bottom of your veggie drawer
(Our grocery had a mega sale on jalapeños, so I had a ton of those. I also used some thinly sliced onion and leftover cilantro.)
It is an easy, quick recipe giving you time to indulge during nap time. Dump all your ingredients (except the cilantro and jalapeño) and cook till egg is cooked to your liking. I cooked for about 3 minutes.
Once cooked, add the cilantro and jalapeño and enjoy!
The best part of this recipe is you can really add whatever you like to your dish.
